Apple Crusted Pork Tenderloin

Ingredients

  • 0.80lb Pork Tenderloin, Unseasoned
  • 1.5 Large Red Apples (Chopped thin)
  • 5oz Dijon Mustard
  • 6oz Apple Juice
  • sprinkle Black Pepper
  • sprinkle Seasoning Salt

Directions

Step 1
Step 1: Preheat oven to 350 F. Place whole pork tenderloin in an oven safe roasting dish. Sprinkle with salt and pepper and spread dijon mustard on pork. Cover the bottom of the pan with apple juice. Cover with aluminum foil.

Step 2: Bake in oven for approximately 40 minutes. Remove from oven and slice pork in to 1/2 inch pieces. (Pork will still be pink inside). Lay the pork slices in the pan.

Step 3: Mix peeled, chopped apples, brown sugar and sage in a bowl. Spread mixture over the pork slices in the pan.

Step 4: Return to the over and finish cooking until there is no more pink in the center of the pork (approximately 15 minutes). Serve warm.

Sweet Potato Casserole

Ingredients

  • 2 Medium Sweet Potatoes
  • 1/2 tablespoon Butter (melted)
  • 1/2 teaspoon Olive Oil
  • 1/2 teaspoon Thyme (finely chopped)
  • 1/2 clove Garlic (finely grated)
  • 1 sprinkle Salt & Pepper
  • 1/4 cup Plain Greek Yogurt, non-fat
  • 1/2 Large Scallion (white and green parts chopped)

Directions

Step 1
Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.

Make a series of 1/8-inch slices along each potato, slicing 2/3 of the way through.
Step 2
Place on the baking sheet and roast until the center of the potatoes are tender and the outside is crisp, 50 minutes to 1 hour. Halfway through the roasting time, remove the potatoes from the oven and run a fork gently across the tops of the potatoes, using light pressure, to fan the slices and separate them from one another

  • 1/2 cup baby carrots,fresh (whole)
  • 1/2 cup red sweet pepper,fresh (chopped)
  • 1/2 cup green pepper,fresh (chopped)
  • 1/2 cup broccoli,fresh (whole)
  • 1/2 cup sweet onion,fresh (chopped)
  • 1/2 cup zucchini,fresh (chopped)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and Pepper to taste

Directions

Step 1
Preheat oven to 350 degrees F.

Add all vegetables to a large baking dish, cover the bottom of the dish with water, less than 1".
