Black Bean Burgers

Ingredients

  • .5 Small Onion (diced)
  • 1 Large Egg (unbeaten)
  • 2 cloves Garlic (minced)
  • 1.5 teaspoons Cumin
  • 1.5 teaspoons Chili Powder
  • 1 teaspoon Salt

Black Bean Burgers

  • 7.5oz Black Beans (Rinsed and Drained)
  • 7.5oz Corn, Canned
  • 1 tablespoon Diced Red Peppers, Canned
  • .5 cup Bread Crumbs

Black Bean Burgers (Optional)

  • 2 Whole Wheat Buns
  • 8 leaves Spinach
  • 4 Tomato Slices

Beer Pairing: Dark Beer (i.e. stout)

Directions

Black Bean Burgers
Step 1
Puree black beans in blender or food processor with diced red peppers.
Step 2
Transfer beans and peppers to large mixing bowl and by hand or with wooden spoon mix in breadcrumbs, egg, corn, onion, garlic, cumin, chili powder and salt. If mixture seems too moist add more breadcrumbs until mixture is able to form patties.
Step 3
Patty the mixture into hamburger size cakes. Place on a greased baking sheet.
Step 4
Bake at 375 degrees for approximately 15 minutes. Flip half way through. Remove and let sit for a few minutes before serving.

Ingredients

  • 13oz Potatoes, russet
  • 1/4 teaspoon vegetable oil
  • 1 teaspoon white sugar
  • 1/4 teaspoon salt
  • 1 sprinkle cayenne pepper

Directions

Step 1
Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
Step 2
Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

Tomato & Feta Salad

Ingredients

  • 2 Medium Tomato (sliced)
  • 2 tablespoons Feta Crumbles
  • 2 tablespoons Basil (chopped)
  • 1 tablespoon Balsamic Vinegar
  • Salt and Pepper to taste
